Maldives Foods Menu Traditional
Fish, Coconuts and Starches are the three main items in traditional cuisine of Maldives foods menu.
Mas riha, the most known curry dish in the Maldives, cooked with the diced fresh tuna, onions, roasted chillies, coriander, fennel, cumin and garlic.
kukulhu riha, a chicken curry with a different taste and mixture of ingredients.
Some Maldives foods menu inspired by a neighbor country, as you know, Maldives is located in the Indian Ocean.

Mas Huni (coconut mix and tuna)
It is a grained tuna, chili and coconut mix, likely salad, easy and fast to prepare. This dish mostly serve for breakfast with black tea and roshi.
1 cup of Diced/sliced tuna or can tuna chunks
1 cup of coconut (scraped/grated)
few chopped of coriander leaves
1 scotch bonnet / chopped chili
1/2 cup onion
1/2 cup lemon or lime juice
Mix the onions, scotch bonnet or chili with lemon or lime juice
add the tuna and coconut mix it well
serve with roshi.
A most famous bread in the Maldives.
2 cups plain or all-purpose flour
1 tsp salt
2 tsp vegetable oil
Mix all ingredients in a bowl with a warm water until you have a dough.
slice the finish dough into a small piece
dust each slice with flour and used rolling pin to spread and form into a flat circle.
heat a plain frying pan and put the finish dough eventually flip the dough until the both side are cooked
then serve with Mas huni or curry, etc.
Kulhimas also known chili fish/tuna. Maldivian love this dish, it can be eaten with roshi or chapatti. Mostly serve at breakfast or dinner.
1/2kg fresh tuna cut in a small cubes
2 medium size onions
1tsp grated ginger
4 cloves garlic chopped
1 chili pepper chopped
1 tsp chili powder
2 tsp curry powder/paste chicken or fish
3/4 cup of coconut milk
1/2 cup water
2 curry leaves
4 pieces of Pandan leaves cut a 1 inch size
3 tbsp cooking oil
Fry the onions, garlic, ginger, curry leaves and Pandan leaves into a hot oil.
Add chili powder, curry powder / paste and salt while stirring
add the tuna and toss until all tuna piece are coated.
Now add the chili pepper, cardamom pods,water and coconut milk and wait until the tuna is cooked with a low heat.
serve with Roshi or rice.
Every Maldivians loved curry dish. Since, Maldives is composed of a thousands island that lie in the Indian ocean, will not be surprised that fish is one of source of there meat.
100g fish (is doesn’t have to be tuna)
1 medium shallot
1 garlic clove
½ tsp ginger
⅓ tbsp fish curry powder (Maldivian or Indian)
⅓ tsp turmeric powder
⅓ tsp cumin powder
2-4 curry leaves
½ pandan leave
½ Small cinnamon stick
1 tbsp vegetable oil
2 tbsp coconut cream
Slice the fish and vegetables in a small size.
chop garlic and ginger.
Fry seute onion,garlic,ginger,cardamon,cinnamon,curry and pandan leaves in a heat oil until it becomes slightly browned.
Add the tumeric, curry powder and cumin in another 2minutes and keep stirring.
Add the tomato and leave for about 15minutes.
Now add the fish and a cup of water and wait until the meat become tender.
To make thicken the gravy now add the coconut milk, and slightly salt and pepper for a better taste you want.
